The simplest sourdough ever—works with any stage of starter, no need for stretch and folds, and you can skip the refrigerator ferment altogether. It turns out great every single time! I came across this method referred to as “unloaf sourdough.” I usually make two loaves from this batch—baked these today.
“Unloaf” Sourdough Bread (Rule-Breaker Style)
Ingredients:















165g unfed sourdough starter

400g warm water

650g bread flour

15g sea salt

Instructions:


1. Mix all ingredients until combined.

2. Cover and bulk ferment on the counter (3–12 hours depending on room temp).

3. Shape and let rest for 1 hour.

4. Optional: Refrigerate up to 15 hours for cold proof.

5. Score dough and place into a cold Dutch oven, in a cold oven.

6. Set oven to 450°F and bake for 1 hour, covered.

7. Lower to 425°F, uncover, and bake 10–15 minutes until golden brown.
